Candy Cane Peppermint Truffles

Here’s the last Christmas post for the year (and the last post for the year, too o.O ) I haven’t quite made it to 100 followers, but it’s close enough. It’s certainly more than I was expecting when I began this blog at the beginning of this year, and for that I must thank you all, my lovely readers. Candy Cane Truffles

Recipe from ecole chocolat Ingredients 182g white chocolate, finely chopped 70g cream 3 sprigs mint 1/2 tsp crème de menthe 1 tsp peppermint essence 14g butter, softened 335g candy canes, crushed Method Bring the cream and mint to a simmer, then remove from the heat and allow to cool for 15 minutes. Remove the mint. Return the cream to the stove, and bring to a rolling boil with the crème de menthe and essence. Pour the cream over the chocolate. When the chocolate is all melted, stir in the butter. Refrigerate overnight until firm. Roll ganache into balls approximately half a teaspoon each. Refrigerate. Roll the balls in the candy cane.

  1. Could you dye the white chocolate of the truffles green so that it contrasts nicely with the red/white candy canes, or would that change the consistency too much, or would it look very odd?
