Billionaire Brownies

Millionaire’s shortbread, or millionaire’s slice is basically caramel slice; shortbread, topped with caramel and then milk chocolate. These brownies were originally called Slutty Brownies (“because they’re oh so easy, and more than a little bit filthy”), but I couldn’t very well tell my family that, now could I? Hence the name change (and honestly, alliteration is amazing 😛 ).

Food of the Gods.

Now, most recipes call for pre-made mixes for the cookie and brownie layers. That’s all well and good, but it’s not very good for me to post a recipe that’s so simple. The cookie recipe is the fabled ‘$250’ Neiman Marcus cookie recipe, and the brownie recipe from Pillsbury.

Remember to melt your chocolate in a double-boiler so that it doesn’t cook too quickly and seize.

Billionaire Brownies

Ingredients
Cookie layer
115g butter
1 cup brown sugar
3 Tbs sugar
1 egg
2 tsp vanilla extract
1 3/4 cups flour
1/2 tsp baking powder
1/2 tsp sodium bicarbonate
1/2 tsp salt
1 1/2 cups chocolate chips
1 1/2 tsp instant coffee

Oreo layer
2 packets Oreos 😛

Brownie layer
115g butter
100g dark chocolate
1 cup sugar
1 tsp vanilla extract
2 eggs
1/3 cup flour
1/3 cup cocoa
1/4 tsp salt

Method
Cookie layer
Cream the butter and sugars.
Beat in the egg and vanilla.
Mix the flour, baking powder, sodium bicarbonate, salt, chocolate, and coffee together.
Stir into the butter-egg mixture.

Oreo layer
Try not to drool too much when you open the packet.

Brownie layer
Melt the butter and sugar.
Stir in sugar and vanilla.
Beat in the eggs, one at a time.
Stir in the flour, cocoa and salt.

All together, now!
Grease and line a 9 inch (23 cm) square cake tin.
Spoon in the uncooked cookie dough.
Smooth the surface and lick the spatula.
Arrange the oreos in a single layer on top.
Pour the brownie mix over the oreos.
Wipe off any saliva.
Bake at 170°C for 45 minutes or until completely cooked through.
Cool in tin.

Eat.
